L aetitia’s story begins on a farm in the South of France, where her family has lived for generations through hunting, farming, and a deep respect for the land.
Her father is a winemaker on the family estate of Clos Mortillet, in Pignan near Montpellier, and he reflects a long tradition of care, patience, and respect for nature. The vineyard is farmed biodynamically and has been certified organic for 20 years. These wines are a tribute to where Laetitia comes from: honest soil, family tradition, and the flavors of home. (Speaking of wine, her great, great, great grandfather was Henri Mares, who established the protocol for sulfur treatment of grapevines to combat powdery mildew, and for this contribution had a street named after him in Montpellier.)
After spending ten years in Paris working for BNP Paribas, Laetitia arrived in San Francisco in 2011 and instantly fell in love with California. Inspired by her passion for gastronomy, she became a personal chef. She learned to cook beside her mother and grandmother, discovering early that the best food begins with the best soil. That connection to the earth shaped everything she does. Outside the kitchen, she loves reading, skiing, and horseback riding.
